Blueberry Muffins 🫐

Ingredients
2 eggs, room temp
110g butter, melted
110g granulated sugar
110g dark brown sugar
85g Greek yoghurt
1 tsp vanilla extract
280g plain flour
2 tsp baking powder
1 tsp salt
80ml milk
320g blueberries
Lemon ginger sugar (optional but honestly sweet enough without it)
125g raw sugar
1 tsp ground ginger
Zest of 1 lemon
Method
Preheat oven to 190°C.
In a bowl, whisk eggs, butter, sugars, yoghurt & vanilla.
Combine flour, baking powder & salt, then sift into the batter.
Mix gently, adding milk a few tablespoons at a time until smooth.
Fold in blueberries (dust them in flour so they don’t sink).
Rub sugar, ginger & lemon zest together with your fingers until you form a sand.
Line and grease a muffin tin. Portion the batter
(6 large or 12 standard).Sprinkle with the lemon ginger sugar.
Bake for 30–35 mins until domed, golden, and no longer bubbling.
Cool on a rack.
