Ingredients:
500g chicken thighs
Marinade
2 garlic cloves, minced
0.5 tbsp ground toasted coriander seeds
0.5 tbsp ground toasted cumin
0.5 tbsp ground toasted cardamon
0.5 tsp cayenne pepper
0.5 tsp turmeric powder
Pinch of ground cinnamon
1 tsp sweet smoked paprika
1 tsp salt
1tsp cracked pepper
1 tbsp lemon juice
1 tbsp olive oil
If making a leaning π tower of Pisa:
1 or 2 large red onions, sliced
A couple of large skewers (if roasting standing up)
2 tbsps of finely chopped parsley,to garnish
Method:
Marinade the chicken overnight.
You can roast on a tray (boring), grill on the BBQ, or make your own leaning tower of Pisa with the skewers and onion (send me a pic).
Roast the chicken in a 190C oven until an internal temperature of 74C is achieved (you can chuck your capsicum/potato around the sides to roast together).
I like to serve it in a lentil wrap with roasted capsicum, shredded iceberg lettuce, sliced and salted tomatoes, pickled onions, tzatziki/cacik, and fresh parsley.
NOTE: Please toast and crush the spices fresh π it DOES make a difference and IS worth the extra effort! The aroma alone! Like freshly roasted and ground peanuts! (Even if you are allergic it smells good right???)
