2-Ingredient, Paper Thin, Sesame Scented, Pancakes π€€

Ingredients:
2 cups of all purpose flour (300g)
1 cup of water (240ml)
1 tablespoon of sesame oil (12g)
Method:
Combine hot water and flour in a bowl, then knead until smooth (roughly 5 mins).
Cover with plastic wrap and let rest for 25 minutes.
Remove the dough from the plastic, divide into two balls and roll out into a rough rectangle 1/4 inch thick (0.6cm).
Cut out circles using a 3 inch (7.5cm diameter) biscuit cutter (or cup).
Brush the face of one pancake lightly with sesame oil, stack another on top of the oiled side, press lightly together, and roll out into a 6 inch disc.
Over medium-high heat, preheat a cast iron pan, before cooking your pancake for roughly 30 seconds, flip it, and cook again for another 25-30 seconds.
Pull it off, and gently separate the two pancakes at the seam while still hot.
Place under a towel to prevent drying out.
Repeat the above process with the rest of your dough and enjoy.
