Ingredients
Peanut oil
Pork mince
Shallots, finely chopped
Spring onions, thinly sliced
A handful of mint leaves, clapped to wake up the flavours, then roughly chopped
A large handful of coriander, roughly chopped
Honey or palm sugar
Chilli flakes
Lime juice
Fish sauce
Panko crumbed fried yolk and iceberg lettuce or sliced cucumber, to serve
