Ingredients
Filling
Dash of olive oil
1 small onion, finely chopped
2 garlic cloves, minced
500g fresh spinach, roughly chopped
(or 300g frozen, thawed & squeezed dry)200g feta cheese, crumbled
100g ricotta or cottage cheese
2 eggs, lightly beaten
Zest of 1 lemon
1 tbsp chopped fresh dill or mint
Salt & pepper, to taste
Pastry
Traditionally wrapped in filo, but as I said, I didn’t buy in...
3 rice paper sheets
1 egg + a dash of milk
METHOD
1. Preheat Oven
Set oven to 180°C fan-forced
2. Make the filling
Heat olive oil in a large pan over medium heat.
Sauté onion for 3–4 minutess until soft (TIP: hit ‘em with salt to draw out moisture and caramelize faster.)
Add garlic, cook for 1 more minute.
Add spinach in batches.
Cook until wilted and most of the moisture is gone.
Remove from heat and let cool slightly.
In a large bowl, combine:
the spinach mixture, feta, ricotta, lemon zest, herbs, salt, pepper.
Taste, adjust, then stir in the eggs once you’re happy with the flavour.
3. Wrap it up
Whisk the egg + milk together on a plate.
Dip each rice paper sheet briefly, then lay on a greased chopping board.
Spoon the filling across the centre and roll it up (See video).
Brush the tops with leftover egg wash and sprinkle with sesame seeds
4. Bake
in the oven for 20–30 mins, or until golden and crisp.
Cool for 10–15 mins before slicing…unless you're into molten cheese mouth 🥵
