Ingredients
Good-quality eye fillet
1 egg
red onion, finely diced
pickles (gherkins or cornichons), finely chopped
capers, chopped
Dijon mustard
A dash of Worcestershire sauce
A few anchovies, finely chopped (optional, but not really!)
Squeeze of lemon juice
Chopped parsley and chives
Salt & pepper
Dash of Tabasco or hot sauce (to taste)
Method
Prep everything finely. This ain’t the place for chunky onion and lazy knife work.
Trim and mince the steak. Sharp knife, small dice.
In a bowl, mix the beef with onion, pickles, capers, herbs, mustard, lemon juice, Worcestershire, anchovies, and hot sauce. Season well.
Taste and adjust
Plate it up in a neat mound. Topped with the egg, like the sun on a raw beef horizon…
Serve with toasted bread, crackers, or just a spoon and a knowing smile 😉 🍴
